I love to eat something sweet with my morning coffee.
But earlier this year I realized that my homemade “protein” balls actually had more sugar than protein in them. Yikes!
So I set out to reinvent my recipe.
I added chocolate protein powder….that didn’t taste so great. I tried reducing the honey and increasing the coconut oil, but then they were high in calories. Less peanut butter and oil made things too dry.
After many adjustments, these breakfast cookies are my final product! With over 9 grams of protein and under 6 grams of sugar, these cookies still give both my mouth and my body a treat worth celebrating.
If you are used to very sweet things, these cookies aren’t for you. But if you’re trying to train your taste buds to be ok with less sugar, add a few tablespoons of pure maple syrup and gradually decrease the amount.

Recipe
- 1 cup oats (I use gluten free)
- 1/4 cup sunflower seeds
- 1/4 cup mini chocolate chips (mini chips disperse the sweetness, I buy dairy free)
- 1/2 cup protein power
- 1/2 cup smooth peanut butter
- 2 eggs
- 1 teaspoon vanilla
- 1/4 teaspoon salt
- 1/2 teaspoon baking soda
Directions: Mix all ingredients. Scoop and flatten cookies. Bake at 350 degrees for 15 minutes. Makes 8-10 cookies.
Store in fridge for best taste!
