Easy Breakfast Here We Come!

I saw this recipe on Instagram and made a few modifications to make it work for me. Check out @lindsay.keosayian for the original recipe and other great recipes!

This baked oatmeal recipe can satisfy your sweet tooth and give your body tons of needed energy for the day.

I bake a pan and use it for breakfast and even lunch. It’s great fresh or reheated. And the slightly melted chocolate chips are absolutely amazing with coffee!

Recipe:

  • 2 cups milk or water (can use almond milk)
  • 1/3 cup peanut butter
  • 1 tsp. vanilla
  • 2 cups oatmeal (I use gluten free)
  • 1/4 cup cacao powder
  • 1 tsp. baking powder
  • 1/4 cup protein powder
  • 2 tbsp. chia seeds
  • 2 tbsp. sunflower seeds
  • 1/3 cup chocolate chips (I buy dairy free)

Baking Directions:

Mix ingredients and pour into 8×8 baking dish. Bake for 45 minutes at 350 degrees F.
