There are 3 main reasons I love this banana muffin recipe:

  1. It’s easy easy to make!
  2. Each muffin has about 7 grams of protein.
  3. The muffins are so yummy.

They truly are so easy to make! I can whip up a double batch on a Sunday afternoon and keep them in the fridge or freezer until we’re ready to eat them. Because they are made with almond flour and not traditional flour they have a lot more protein than regular muffins and are naturally gluten free. Although they have no added sugar (other than the chocolate chips), they still taste sweet.

Why I make these banana muffins so often

The real reason I make these muffins so often is because my husband loves them. Anytime he tells me repeatedly he likes something and is excited to pack it for work days or work trips, that’s a win in my book! I also feel good about giving him these muffins because they are higher in protein, lower in sugar, and don’t have preservatives in them like prepackaged snacks.

But I also make them because I love them, especially if I pair them with a cup of coffee.

Even if you love to cook, easy recipes are always appreciated. You likely already have all of the ingredients in your kitchen. If you’re looking to reduce sugar and increase protein in your diet, these muffins are perfect for you. Just combine all the ingredients and bake for about 20 minutes.

Recipe:
  • 3 bananas
  • 2 eggs
  • 1/2 cup peanut butter
  • 1 teaspoon vanilla
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 1 teaspoon cinnamon
  • 1/2 cup chocolate chips (I used Toll House Allergen Free)
  • 1 1/2 cups almond flour

Combine all ingredients and bake at 350 degrees for 20-25 minutes.
