Instant Pot Chicken Dinner Recipe
I never get sick of this Instant Pot meal! It’s delicious, healthy, and makes cooking lunch and dinner easier for several meals (more on this later). With my busy life, cooking healthy needs to be simple and this recipe keeps it that way. If you want to watch me make it, scroll to the video. Why I love this Instant Pot Recipe
The first reason I love this recipe is because it tastes amazing. The tender chicken, soft potatoes, and slightly salty broth truly feel like a comfort food. But unlike other comfort foods (sorry french fries) this one is incredibly healthy. You can also choose your favorite vegetable to serve with this meal. I usually keep it easy and cook some frozen green beans or broccoli on the stove.
The second reason I love this meal is because it is so simple to make. If you’ve ever used an Instant Pot, or other type of pressure cooker, you know that once you put your ingredients in the pot you’re job is pretty much done. I love that I can add the broth, chicken, potatoes, and spices to the pot, take care of whatever else I need to get done after work, and my dinner will be warm and ready without any more thought (other than the quick vegetable I decide to add).
The final reason I love this meal is because it makes meals for the rest of the weak easier. I add enough chicken to the pot for 1-2 chicken and potato lunches, and also a few dinners like chicken tacos, lemon pepper chicken, or whatever else I can use this tender, fall-apart chicken with.
A Few Tips for this Instant Pot Recipe
First don’t add your vegetables to the pressure cooker. Yes, it will make things a little easier, but putting vegetables into the pressure cooker basically turns them into baby food. Not the most tasty way to eat green beans.
Second, if you like broth (like me!) add extra broth to your pressure cooker. My pressure cooker calls for 1 cup of water or broth, but I do 2-3 cups because I like to eat the potatoes with extra broth.
Finally, be sure to follow the cooking instructions for your specific pressure cooker. Whether you have an Instant Pot or the Multi Cooker from Pampered Chef like me, be sure to follow the cooking instructions for your specific device. I cook this chicken recipe on high pressure for about 20 minutes if the chicken is thawed. If the chicken is frozen, I cook it on high for about 30 minutes. Again, be sure to follow your device’s instructions. The chicken should fall apart when it’s cooked thoroughly.
The original recipe comes from Creme De La Crumb, but I’ve altered it to make the recipe simpler and according to my allergy needs. So if you want to learn potential substitutions, check out the orginigal recipe.

Recipe:
Ingredients:
- 3-4 lbs chicken breasts
- 2 lbs potatoes
- 2 cups chicken broth or water
- 3 tbsp olive oil
- 1 tsp salt
- 1 tsp garlic powder
- 1 tsp oregano
- 1 tsp parsley
Directions:
Combine olive oil and spices in a small bowl. Pour chicken broth into the pot first, then add the chicken and potatoes coating each layer with the seasoning and oil mixture. Cook according to your pressure cookers cooking recommendations. For my Multi Purpose cooker, I cook on high pressure for 20-30 minutes depending on if my chicken is thawed or frozen.
